Scott’s extensive experience in the hospitality industry has brought innovative ideas and expertise to the heart of the Colicci operation. The Central Parks operation requires a steady hand and Scott consistently supports and inspires the teams around him.

Finance Manager

Sharon leads the accounts team at our HQ in Mitcham, keeping the wheels in motion. Her knowledge and historic understanding of the business is unrivalled through assisting the company through decades of growth.

Logistics & Event Manager

Tim acts as the bloodline of the operation and keeps the yard in Mitcham in an organised fashion. You will also see Tim leading on various events throughout the year. Tim has almost 30 years of service under his belt and his commitment to the cause is tireless.

Creative Director

Consulting with the team since 2018 across interior design Katy also assisted with successful contract tender bids. Katy now works across all things design, brand & communications including creative marketing opportunities.

Head of Food

Leandro Seradilla brings a wealth of experience from some of London’s most respected kitchens, including working alongside José Pizarro. 

With a strong foundation in seasonal, ingredient-led cooking, Leandro is known for creating menus that balance quality, simplicity and provenance. 

At Colicci, he leads the development of innovative food concepts, with a focus on sustainability, supplier relationships and delivering exceptional food experiences across diverse, high-volume environments.

SW Area & Bakery Manager

Standards throughout Bushy & Richmond Park never miss a beat. Mustapha manages our bakery at Bushy Park; a 7 day production that delivers delicious cakes and exceptional quality throughout the year.

Sarah is an accomplished hospitality strategist with a deep knowledge in operations.

Sarah specialises in employee experience, strategic HR and employer branding and is equally recognised for her operational expertise across some of the industry’s well known brands Yo Sushi and Formula One arcade.

Sarah is renowned for creating exceptional workplace cultures that attract and retain top talent while ensuring seamless and memorable guest experiences.

Director of Operations

Lee Pierce worked closely with Colicci as a long-standing collaborator before joining the team in-house. 

Known for a strong passion for the business, a sharp eye for detail, and a clear sense of commercial opportunity, Lee has successfully mobilised a number of new openings. 

Lee has led the operational delivery of major events across The Royal Parks, as well as overseeing the operational delivery at the Chelsea Flower Show.

Area Manager | South East London

Khalil has over five years of experience with Colicci, providing crucial on-site support to General Managers and their teams. He conducts regular site visits to identify and resolve operational inefficiencies, ensuring consistent quality and excellence with his signature smile.
